Chicken Chile Verde

Growing up, my mom made the best chile verde. I mean it was THE BEST! It was that recipe that all of our friends and family would ask her to make for every occasion.

I’ve never been a big fan of pork, but the sauce was divine and the smell of chile verde cooking in our kitchen as a kid is one I can still vividly remember today. As I got older I knew I wanted to create my own version without pork, and of course an easier version than the one my mom would spend hours creating in the kitchen. I still remember the stunned expression on my mom’s face when I asked her if she could substitute the pork with chicken for me.

To my mom’s chagrin, I went ahead and created my own version of her chile verde using chicken instead of pork and simplifying the recipe altogether. With a busy family of five, I like to have dinners that are easy to make ahead of time and that I can leave on the stove to warm later. It may not be the way my mom makes her chile verde, but I think she’s pretty impressed with my version, as I think you all will be, too.
