Roasted Cauliflower

Roasted cauliflower is a weekly staple in our house. It may be the one and only thing I make that everyone in the family likes. Not only is it crispy, cheesy and delicious, it’s also so easy to make. (Try adding a bit of paprika for some extra flavor.)

If you have any leftovers (I always make extra for this reason) it’s great the next day. I’ll usually take whatever is left over in the fridge and create some kind of bowl with it. One of my favorite cauliflower bowls to create is with leftover grilled chicken, brown rice and/or quinoa, arugula, cherry tomatoes and a little bit of goddess dressing. So good.
