Creamy Pumpkin Soup with Grilled Cheese Croutons
The first time I made this soup was several years back for a neighborhood progressive dinner party. We used to do these dinners where we would start with drinks at one house, and then stroll to the next house progressing through appetizers, soups, dinner, dessert, etc., as we went. They were such fun parties and a great opportunity to sample each other’s recipes.
Since my course for that particular year was soup and it was late September, I remember searching Pinterest for the perfect autumn soup recipe. Once I found this pumpkin soup recipe, I knew my search was over. It was definitely the grilled cheese croutons that sealed the deal for me.
